Abstract
Honey is the most popular bee product used by man, with nutritional and medicinal purposes. Its great diversity is attributed to numerous factors (bee type, visited flora, environment, and management). The quality of honey is controlled with routine parameters (free acidity, diastase activity, reducing sugars, ash, water, hydroxymethyfurfural, and sucrose contents). Besides the biochemical quality control, a functional profile is also important for pharmacological applications.
